My favorite pickled egg recipe
2 cans beets
1/2 onion
1 cup sugar
3/4 Cup vinegar
1/2 tsp salt
Pinch of black pepper
2 bay leaves
6 garlic cloves
Boiled Eggs, roughly 30 quail eggs
Add beet juice, vinegar, sugar, garlic, bay leaves, salt and pepper in a pot. Bring to a boil. Add onion and let it simmer for 5 minutes and turn off heat
Take a jar, add a layer of eggs, then beets, then onions and repeat until jar is full. Pour hot liquid into jar. Seal jar with lid and band. Let cool and place in refrigerator for 2 weeks or longer to absorb flavors. Enjoy!
