Quail egg quiches

This time of year, chickens are slowing down production and the plentiful eggs are scarce. Light will keep them Laying but for many that is not practical.

Quail, are easily kept inside sheds, barns or even garages! Keeping light on them for continued laying is easier. Birds need 12-14 hours of consistent light to lay. I recommend adding light all day and to not extend their day from 4-10. Dreary, cloudy days are not lighted enough and birds won’t be perky- much like us! I light mine from 5:30 am to 8:30 pm. Every day. All year.

Now you have done this, you have way too many eggs again! As a homesteader, we want to use all our items to best ability. So here is a simple idea- egg quiches.

Grab a mini muffin pan.

Crack one quail egg in each hole.

Add a pinch of bacon bits, sausage bits or ham on top (cooked already)

Add a pinch of cheddar cheese on top

Bake at 350 for 10-12 min or until done

They will pop right out because the oil from the cheese will prevent sticking.

These are great fresh and hot, or stored in fridge cold.

Have fun with them with maybe mushrooms and herbs. Easy and yummy!
